Our Interview with Top Chef Collin Brown of The Lane Restaurant, London EC1

THE POWER OF SELF BELIEF

Patricia - Collin you are doing extremely well and making really good progress with your new restaurant. Top named celebrities are often seen to be sampling your cuisine and you often have press coverage. I understand you are now regularly on the Living Channel. To what to you credit your success and what advice/tips can you give other up and coming entrepreneurs?

Collin - The most important thing is to be humble but at the same time to know your own abilities and be confident in yourself. I started small, just making cakes and selling them on the street. I had very little back up and even less funding but I strongly believed in myself and had a great desire to succeed. I knew that I could do it. I made mistakes along the way but that is how you learn!

You also find out who your friends are. When I was experiencing a certain level of success I had people all around me, but when I was going through difficulties people stopped returning my calls. Nowadays the phone is ringing again! I dont let that worry me I just stay in the kitchen and do what I am best at.

Patricia - What is the biggest challenge you face?

Collin - Money! (he laughs). People look at everything and assume I am rich, but right now everthing is about investing in the business and expanding. That costs!.

Patricia - So how do you handle this challenge Collin?

Collin - I make people offers that they cannot refuse! I literally make it hard for pople to say No. For instance one day a few months ago I rang the head producer at Living Channel and offered them the opportunity to come to my restaurant and have anything they wanted completely free of charge! Well they came down, eventually, they enjoyed the cuisine and now they call me regularly and I work with them all the time. Its all about believing in yourself Patricia and knowing you can deliver the goods. You have to be creative and innovative and if you keep pushing success will come.

Patricia - Sounds to me like you are a bit of a hustler!

Collin - You have that exactly right, thats it precisely! You have to go and make it happen. Make the deal and keep your end of the bargain.

Patricia - Any other pointers Colin?

Collin - Be genuine, help others, talk to everybody, the taxi driver, the chauffeur, everyone is important.
